Glycine (CAS number 56-40-6, chemical formula C2h5no2, a non-essential amino acid for humans, is also the simplest amino acid. It contains no chiral carbon atoms and is a colorless to white crystalline powder with no odor and a slightly sweet taste. It is readily soluble in water (approximately 25g/100mL at 25°C), slightly soluble in ethanol, and insoluble in organic solvents such as ethe r and ace tone. Its melting point is approximately 232-236°C (decomposition), and its aqueous solution is neutral or slightly alkaline (pH 6.0-7.5, 1% aqueous solution).
Industrial production mainly adopts the Strecker process (using formaldehyde, sodium cyani de and ammonium chloride as raw materials) and the chloroacetic acid ammonolysis method (reaction of chloroacetic acid with ammonia water). Food-grade and cosmetic-grade products need to undergo multiple steps of purification to ensure that the impurity content is extremely low and meets relevant safety standards.

(1) Food industry
Food additives: As a flavor enhancer (umami enhancer), it can be combined with monosodium glutamate to enhance the umami taste of food; as a sweetener, it is used in candies, cakes, and beverages to improve the taste; it can also be used as a preservative to extend the shelf life of meat and dairy products.
Nutritional enhancer: Added to infant formula, protein powder, and sports nutrition products to supplement amino acids and meet human nutritional needs.
(II) Cosmetics and daily chemical industry
Skin care: As a moisturizer, it absorbs moisture from the air to keep the skin hydrated; as a pH regulator, it stabilizes the pH of skin care products (such as lotions, creams, and masks) to reduce skin irritation; it can also soothe sensitive skin and relieve dryness and redness.
Oral care: Add it to toothpaste to reduce the irritation of surfactants to the oral mucosa and improve the taste of toothpaste.
(III) Industry and other fields
Pharm intermediates: used for the synthesis of dru (such as amino acid injec tions and anti-ulcer dru), but not related to USP pharmacy, medi cine, or pharmace utical applications.
Feed additives: added to livestock, poultry and aquatic feed to promote animal growth and improve feed utilization.
Electroplating industry: As a complexing agent, it combines with metal ions to improve the uniformity and glossiness of the electroplated layer.
